Easy Matcha Chai

Ingredients (for 2 cups)

  • 250 ml oat milk (or a milk of your choice)
  • 280 ml water
  • 1 tsp matcha powder
  • 1 cinnamon stick
  • 2 cloves
  • 2 cardamom pods (bruised)
  • 1 piece of fresh ginger (approx. 2 cm, sliced)
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp black pepper
  • 1-2 tsp maple syrup or honey (to taste)

 

Preparation:

  1. Bring 250 ml of water to the boil with the cinnamon stick, cloves, cardamom, ginger, nutmeg and black pepper.
  2. Allow this mixture to infuse on a low heat for 5-10 minutes to release the flavours.
  3. Pour the 250 ml of vegetable milk to the chai infusion and heat gently with it (do not let it boil).
  4. Add the maple syrup or honey and stir.
  5. Strain the matcha into a separate bowl or measuring cup to avoid lumps.
  6. Add 30 ml of warm water (maximum 80 °C).
  7. Whisk with a bamboo whisk until a nice layer of foam forms.
  8. Pour the hot chai milk mixture through a fine sieve to extract the spices.
  9. Add the whipped matcha to the mixture and stir well.
  10. Pour into mugs and serve immediately. Sprinkle some cinnamon on top if desired.
