Nishio ( 西尾市 ) is a city in Aichi Prefecture, similar to what we consider a province in the Netherlands, and is known as Japan's regional leader in producing matcha teas. The roots of matcha tea as we know it today can be found here! Nishio is therefore known as a place where high quality matcha tea comes from.
This matcha tea comes from and blend of leaves of the Tencha species. This matcha has a coarser texture compared to ceremonial matchas, making it perfect to use as culinary cooking matcha in various dishes or baking recipes.
